RECIPES  - MOMMA'S TOMATO MEAT SAUCE, THE 10 MINUTE VERSION.

Did your Momma or Gammy used to spend all day in a kitchen making sauce for the family? Beef, tomatoes, veggies, spices, special pots? Maybe you risked a swift pop if you tried to get a taste. She was up early or maybe the night before working her mediterranean magic.  

How about I teach you how to make the same sauce, with the same taste in 10 minutes, well 12 minutes including the pasta if you like fettucini?

The Recipe-Momma's Sauce
What you need: 1 package of any pasta. Spaghetti, linguine, etc. for me I like fettucine, the broader noodle seems to hold the sauce better, but that is opinion. 1 jar of any kind of spaghetti sauce, at Aldi they have a great dollar, fifty sauce to use as a base. 1 package of small frozen sausage links, 1 frozen hamburger patty. I prefer 85/15 lean but not sure it makes a difference. What does make a difference is making suure you don't go buy some fresh ground sirloin. I tried it, and it made it worse. Trust me, your wallet will be happy. 1 pepper, 1 onion, a pack of small grape tomatoes. Spices: turmeric, garlic powder, paprika, sea salt and cinnamon.  

In a sauce pot fill halfway with water and shake some sea salt into the water and heat to boil Defrost the patty for 2 minutes on time defrost in the microwave, Heat a few tablespoons of olive oil in another small pot and put the patty in it, use ny stiff spatula or spoon to chop it while it browns , usally a bout 2 minutes will do. Once the meat is browned pour the veggies into that pot and shake each spice bottle a few times with it as well.  Stir the contents and keep the heat hiigh, making sure it does not fry. At Boil break the pasta into two halves and place in the pot and stir in a circle. amounts depend on your diners. the amount of sauce you will make can be good for 4-6 meals. if you are going to have only 1 or two you only need a handful of pasta. Extrapolate as you go  

Most pasta needs 10-12 minutes at boil, check the package and don't throw it away, just in case you forget to set a timer. Once you browned meat and veggies for 3 minutes, pour in the jar of sauce and mix thoroughly.   Pour in a few shakes of the parmesan, a few pinches of your other cheeses, respice witth all of the oners from previous, cover and simmer while the pasta boils. It can iimprove with a little extra time, butt too long and you will f=dry the sauce and have to add water, which takes away some flavor., Once your pasta is done, put in a collander and drain it. Pour the pasta iinto the dry pot and stir in the sauce to your pleasure on top and stir in a little extra parmesan and you are ready to eat my friend.
